mustard fish

I had seen a recipe where you coat the fish with mustard before rolling in the corn meal.  I tried it last night and it was pretty good.  Makes the corn meal stick and you get a crunchier fish and surprisingly you can't taste the mustard.

I use it on crappie and sandbass. Have used it on catfish with Zaterains Southern blend. All came out very well. I also use it on brisket, does really well too.

good rolled in mustard then in cracker crumbs instead of cornmeal for a little different taste at times

just have to cook the fish on the lower side keep the oil at 365 with a deep fry thermometer.

1/2 prepared mustard and 1/2 sour cream mixed together  works good also.
